- Vinification: The vines grow 50% on silex soils from St. Père, 30% on limestone soils and 20% on clay soils in Pougny along the Loire. After harvesting, the grapes are gently pressed in the cellar and the juice obtained is left to rest for around 36 hours before alcoholic fermentation begins at a controlled temperature of 15-18°C. These careful steps preserve the unique aromas of the Sauvignon Blanc grapes and allow the wine to develop harmoniously. The wine then matures for several months on the fine lees until it is bottled in the spring.
- Culinary recommendation: Gorgeous with fish - from grilled sea bream and trout to steamed pikeperch or a fine fillet of monkfish.
- Aroma & Taste: The Coteaux du Giennois has a pale golden color and delights with characteristic aromas of white flowers, citrus fruits and exotic notes of grapefruit and passion fruit. The wine impresses with its freshness and fruitiness, accompanied by floral nuances and hints of white fruits such as quince and pear.
