- This model is the exotic among knives. Originally made for the preparation of Japanese dishes, it has long since found its way into international kitchens. A Santoku knife is ideal for preparing wok dishes and wafer-thin sushi. It cuts and chops meat, fish, vegetables and herbs with aplomb, although it was designed solely for pressure cutting and not for weighing. In addition to the enormous sharpness of a santoku knife, its characteristic feature is its special shape: Unlike European models, the blade is wider than the handle, giving your fingers more room when cutting. In addition, a Santoku knife is often lighter than its comparably sized European relatives.
