- The high, spherically curved pan is a pot, steamer and deep fryer in one and is one of the most important cooking utensils in Asia. And we love the wok, too: Not only can it be used to cook Asian dishes in style, it can also be used to steam, braise and stew all kinds of vegetables, meat and fish. The best-known cooking method is, of course, stir-frying, when the ingredients are sautéed briefly and hotly with constant stirring. In the deep, bulbous shape, the heat is distributed evenly, and cooking vapors escape through the metal lid with vapor vent. Traditionally, there are two opposing handles on the side of the wok, and a handle plus stem on the wok pan. Today, a wok doesn't have to weigh much to quickly transfer heat from the stove. This is done by the TransTherm® all-stove base, which fits on any stove.
