Description

  • Mafaldine belong to the family of long, curly dry pasta (made from durum wheat semolina and water) and are characterised by their ribbon-like shape, which is curled at both ends.
  • Also known as ‘Reginette' or ‘Reginelle', they originate from Naples and were formerly known as ‘Fettuccelle Ricce'. Later, the Neapolitans dedicated them to Princess Mafalda di Savoia and renamed them ‘Reginette' or ‘Mafaldine' in her honour.
  • The shapes chosen, just like those of Mafaldine, stem from a culinary tradition that is both traditional and free-spirited, which is so well reflected in the colour of the pasta selected.
  • Another point to consider with this type of pasta is how the sauce is poured into the serving dish.
  • This type of pasta is particularly interesting. That is why the following sauces are recommended to accompany Mafaldine: ragù alla napoletana with ricotta, game-based sauces, sauces made with fish, shellfish and seafood, as well as light sauces prepared with soft cheese, curry, saffron, horseradish or ginger.
