- A santoku is a Japanese all-purpose kitchen knife. The name means “three virtues” as its versatile blade is ideal for chopping vegetables and fruits, slicing through meats, and preparing fish. The “scallops” (series of hollow-ground cavities) reduce drag so the blade glides through food more easily.
