- Vinification: Crushing of the whole berries by gravity. Parcel-by-parcel vinification in small concrete tanks. Gentle extraction by pigeage and remontage. Matured for around 1.5 years in barriques and foudres.
- Culinary recommendation: Wonderful with beef - from steaks and stroganoff to tartare or slow-cooked roasts from the oven. A wonderful accompaniment to braised dishes of all kinds - whether lamb gigot, beef shoulder, roast pork or ossobuco. Excellent with mature hard cheeses - from Parmigiano Reggiano and Sbrinz to Pecorino or older Alpine cheeses.
- Aroma & flavor: The nose reveals notes of black cherries, wild blueberries and blackberry jam with a hint of violets, undergrowth and aromas of baked toast. Full-bodied and packed with black and blue fruits, it has a firm line of ripe, fine-grained tannins and plenty of freshness and finishes very long and complex.
