    • The estate

    Founded in 1896 by Marcel Ott, an agricultural engineer from Alsace, Domaines Ott* has embodied the excellence of Provence wines for over a century.

    The estate now comprises three distinct estates totalling nearly 300 hectares of vineyards: Château de Selle, Clos Mireille and Château Romassan.

    Since 2004, Domaines Ott* has been part of the Roederer Collection whilst retaining its operational independence.

    Jean-François Ott, representing the fourth generation of the family, currently runs the estate alongside his cousin Christian Ott.

    Pioneers in the international recognition of Provence rosés, Domaines Ott* are distinguished by their iconic bottle, patented in 1932, their early commitment to exporting, and their organic farming certification obtained in 2022.

    The estate's philosophy is based on the principle of ‘doing less but better', prioritising quality over quantity.

    • The vineyard

    Château de Selle, the first estate acquired by Marcel Ott, covers 93 hectares, of which around 65 hectares are under vine, situated in Taradeau near Draguignan in the heart of the Côtes de Provence appellation.

    The vineyard enjoys a privileged position on the limestone hillsides of the Provençal hinterland, benefiting from generous sunshine.

    The soils are characterised by an exceptionally stony composition, comprising 40 to 50% stones, thus creating a particularly arid terroir despite the presence of a few pockets of fertile clay.

    This stony soil gives the wines their distinctive mineral character. The average age of the vines is around 22 years, ensuring fine aromatic complexity.

    The estate, nestled in the heart of a forest of pine trees and Mediterranean vegetation, boasts modern facilities designed by architect Carl Fredik Svenstedt, including a cellar built from stone blocks that allows for gravity-fed vinification.

    • Vinification and ageing

    The grapes for Château de Selle 2025 are harvested by hand before being rigorously sorted.

    Pressing is carried out with the utmost care, without maceration, favouring direct pressing with minimal contact with the skins in order to preserve the wine's characteristic pale colour and delicate aromatic profile.

    Fermentation takes place in temperature-controlled stainless steel vats, followed by ageing for four to six months.

    Malolactic fermentation is deliberately avoided to maintain the natural acidity and freshness of this Provence wine.

    Tasting

    • Appearance

    With a beautiful brilliance, the wine reveals a luminous pale rosé hue, enhanced by silvery highlights and subtle golden nuances.

    • Nose

    The bouquet reveals a lovely aromatic complexity dominated by notes of white peach, accompanied by citrus and orchard blossom aromas, all enveloped in a delicate hint of spice.

    • Palate

    On the palate, this rosé charms with its balance between roundness and freshness. The attack is soft before gradually gaining in intensity.

    The palate unveils a mosaic of summer fruits, crisp pear, ripe apricot and tangy raspberries.

    The silky, fruity texture reveals a subtle density beneath salty notes of lime, pink grapefruit and aromatic herbs.

    The finish lingers elegantly, marked by a refreshing salinity, delicate mineral notes and refined acidity, all concluding on a spicy note.

    • Food and wine pairings

    This rosé is the perfect accompaniment to flambéed or glazed monkfish served with vegetables, grilled poultry drizzled with sauce, or fruit-based desserts.

    Its freshness and briny character also make it an excellent choice for seafood, particularly fresh oysters, as well as for grilled or pan-fried fish with Mediterranean herbs.

    • Serving and storage

    Château de Selle 2025 is best enjoyed at a temperature of between 8 and 10°C.
