- Vinification: The grapes for the Pouilly Fumé come from one of the best terroirs in the region: Kimmeridgian marl with small oysters (terres blanches). After harvesting, the grapes are gently pressed in the cellar and the juice obtained is left to rest for around 36 hours before alcoholic fermentation begins at a controlled temperature of 15-18°C. These careful steps preserve the unique aromas of the Sauvignon Blanc grapes and allow the wine to develop harmoniously. The wine then matures for several months on the fine lees until it is bottled in the spring.
