- Vinification: The Sancerre is grown 50% on silex soils and 50% on limestone soils. These are located in Sainte Gemme and Sury-en-Vaux, small villages in the heart of the Loire. After the harvest, the grapes are gently pressed in the cellar and the juice obtained is left to rest for around 36 hours before alcoholic fermentation begins at a controlled temperature of 15-18°C. These careful steps preserve the unique aromas of the Sauvignon Blanc grapes and allow the wine to develop harmoniously. The wine then matures for several months on the fine lees before being bottled in the spring.
- Culinary recommendation: Gorgeous with fish - from grilled gilthead bream and trout to steamed pikeperch or a fine monkfish fillet.
