- Vinification: The Le Difese (Toscana IGT) is a blend of 70% Cabernet and 30% Sangiovese and has been produced by Tenuta San Guido since 2003. Fermentation takes place in stainless steel tanks at a controlled temperature, with maceration lasting around 12 days - for both the Cabernet Sauvignon and the Sangiovese. Le Difese then matures for 12 months in French and American oak barrels and a further three months in the bottle
- Culinary recommendation: A versatile accompaniment to Italian cuisine with beef, lamb, pasta, antipasti and dried meat specialties.
- Aroma & taste: Wonderfully ripe aromas of wild berries, preserved plums and cassis, spicy vanilla, a hint of cedar and a hint of liquorice. Full on the attack, but still fresh in its flow, the tannins are polished and fine sandy, playful dynamics on the tongue, gentle, full-bodied and wonderfully fruity in the body, with an elegant finish.
