- Vinification: The Le Crocine, named after the winery itself, is a classic Bordeaux cuvée from the Tuscan coastal region. After careful harvesting and selection of the grapes, the must is destemmed and transferred to stainless steel tanks. Temperature-controlled fermentation and maceration take around two to three weeks, with strict attention paid to avoiding over-extraction. After malolactic fermentation, the wine matures for around a year in French barriques before being bottled.
- Culinary recommendation: The Le Crocine harmonizes wonderfully with game dishes, roasts and braised meat. It also unfolds its full character with pasta with strong sauces and grilled vegetables.
- Aroma & taste: Impresses with its deep, vibrant ruby red color and an expressive bouquet of ripe dark fruits, accompanied by a subtle, typically Mediterranean spiciness, which is complemented by fine balsamic notes. On the palate, it is refined and extremely drinkable, with a pleasant tannin structure and a remarkably persistent, elegant finish.
