- Vinification: Selected vineyards in Monte La Conca between the municipalities of San Marzano and Francavilla Fontana. The grapes are harvested by hand and placed in small baskets. Destemming, pressing, cold maceration and subsequent malolactic fermentation in steel tanks and subsequent ageing in French and Caucasian oak barrels for a period of 12 months.
- Culinary recommendation: Anything from the grill goes very well with this wine. Hearty pasta variations or risotto. Mature cheese from cows and goats. Also wonderful after a meal.
- Aroma & flavor: Very strong, dark blue red. The nose is dominated by cassis, spicy notes and cherry confiture. Full-bodied and soft on the palate. Again, lots of black fruit, vanilla and roasted aromas. Dense and pleasantly long finish.
