- Vinification: Alcoholic fermentation takes place in stainless steel barrels at a controlled temperature for around 15 days. After early malolactic fermentation, the wine is transferred to barriques at the beginning of December. It matures in new French oak barrels for 16 to 18 months, developing its complexity, style and longevity. The wine is then matured in the bottle for a further 12 months.
- Culinary recommendation: Savory meat dishes of game, lamb and beef, which are braised or, as is customary in Sardinia, prepared on the grill. We always recommend grilled fish. Not trout - no - it must come from the sea and have its own flavor. Garlic, herbs, olive oil and lemon go perfectly with it. Delicious with mature cheese made from cow's milk. Or an overripe sheep's milk cheese from Sardinia - Casu Marzu.
- Aroma & flavor: Complex bouquet. Cocoa powder, plums, blueberries, sweet spices, fine wood and dried fruit. Beautiful density, warm and very full with present ripe tannins, long finish. Perhaps one of the most beautiful wines of Sardinia.
