- Vinification: The Le Serre Nuove is produced with the same passion and attention to detail as the Ornellaia. The composition of Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot combines accessibility and a remarkable depth of flavor with proven ageing potential. Alcoholic fermentation takes place in stainless steel for two weeks, followed by a maceration period of one week. Malolactic fermentation begins in stainless steel and is completed in barriques (25% new and 75% one year old). The wine remained in Ornellaia's temperature-controlled cellar for a further 15 months. Le Serre Nuove dell'Ornellaia is assembled after the first 12 months and then returned to the barrels for a further three months. After bottling, it matured for a further six months.
- Culinary recommendation: For strong meat dishes such as game, lamb, beef or dark poultry, as well as with mature but not too mature hard cheeses.
- Aroma & flavor: Le Serre Nuove dell'Onrellaia, an appealing and dynamic wine with a dense structure, reveals generosity, richness and plenty of charm. Traces of wild red berries and herbs lend its bouquet an expressive quality, while supple, polished tannins contribute to a long, elegant finish.
