- Vinification: The harvest was carried out by hand in 15 kg crates and the grapes were sorted and selected by hand on a double sorting table before and after destemming and finally lightly crushed. Alcoholic fermentation took place in concrete tanks and - in the case of small parcels - in barriques at temperatures between 25°C and 30°C, followed by maceration for 21 to 28 days. Malolactic fermentation began 100% in new barriques, with the different parcels maturing separately for the first 12 months. The grape varieties were then blended and the blend was returned to the barriques for a further year, resulting in a total maturation period of 24 months. As usual, the Masseto 2019 matured for a further 12 months after bottling before being released to the market.
- Culinary recommendation: Wonderful accompaniment to braised dishes of all kinds - whether lamb gigot, beef shoulder, roast pork or ossobuco.
- Aroma & flavor: Harvested a little later than usual, the Masseto 2019 benefited from the sunny, mild climate at the beginning of September, which gave it fullness and balance at the same time. Its youthful color suggests a rich and intense wine. The nose reveals typical notes of ripe cherries, violets, liquorice and dark chocolate. On the palate, it is broad and lush with velvety, fine tannins that envelop the palate, followed by a fresh, lively finish.
