- Vinification: The grapes were harvested by hand in 15 kg crates. After destemming and light pressing, the grapes were transferred to concrete tanks without pumping, i.e. by gravity alone. The grapes from each parcel of the vineyard were vinified separately. Fermentation took place spontaneously with natural yeasts at temperatures of 25-28 °C with two to three pumpovers per day and additional délestage steps if required. The time spent in the tanks was between 21 and 28 days. Malolactic fermentation took place in 100% new oak barrels, with the different parcels initially aged separately for 12 months. The wine was then assembled and returned to the barrels for a further year. The total ageing period was therefore 24 months. After bottling, the Masseto 2020 underwent a further 12 months of refinement in the bottle before being released onto the market.
- Culinary recommendation: Wonderful accompaniment to braised dishes of all kinds - whether lamb gigot, beef shoulder, roast pork or ossobuco.
- Aroma & taste: The Masseto 2020 combines all the special features of the vintage. Its color and aromas show optimal concentration both visually and olfactorily and are characterized by a constant liveliness in the glass that does not diminish over time. On the palate, the power of this wine is expressed with a beautiful length and balsamic notes. Its solid tannin structure reveals the ageing potential typical of Masseto.
