- Vinification: The work was carried out with great care, both during the harvest and in the cellar, where the grapes were de-stemmed and the berries were carefully selected on the sorting table before being crushed and transported by gravity into the vats. It is of fundamental importance that only perfect grapes enter the 60 hl truncated cone-shaped vinification vats. During fermentation and maceration, the utmost care was taken to maintain the right balance of fruit and tannin quality in order to give the wine sweetness and fragrance, but also personality and character. Immediately after racking, malolactic fermentation began in barriques, which developed the complexity and pleasant drinkability of the wine. The ageing process of around 18 months took place in new French oak barrels. After an initial phase in separate batches, these were blended to complete the maturation in wood.
- Culinary recommendation: An excellent accompaniment to hearty dishes such as roasts, aromatic braised meats or dark meat specialties, which ideally complement its powerful structure and complex aromas.
- Aroma & taste: Solaia presents itself in a deep ruby red color. On the nose, it impresses with its complexity and aromatic finesse: Notes of red berries, especially raspberry and mulberry, alternate with sweet hints of ripe apricot and red orange with a hint of rose petal, perfectly integrating the distinct notes of coffee bean, chocolate and licorice and accompanied by the freshness of mint and white pepper, which add a pleasant and delicate spicy note to the rich bouquet. On the palate, the wine is full-bodied and harmonious with an excellent, harmonious structure. Soft, vibrant tannins make it firm and flattering with an exceptionally long finish. The aftertaste is very persistent, echoing the toast and spice notes perceived on the nose.
