- Vinification: The Rüfiser site is probably one of the best in Malans. It lies on a cone of debris in the middle of the other top Malans sites. Protected from the wind and cultivated on special soil, the vines retain their vitality and freshness even in prolonged drought.selective hand-picking. Gentle destemming in large wooden fermentation vats, cold soaking for more fruit and color. Regular manual immersion of the mash during fermentation. Gentle pressing of the fermented mash. Matured for at least 12 months in French oak barrels (barriques).
- Culinary recommendation: Veal, beef, lamb, Grisons specialties and mature cheeses.
- Aroma & taste: Strong color, impressive aromas, fine notes of dark berries (blackberry and blueberry) plus aromas from barrique ageing: tobacco, fine smoke, some bacon, incredibly deep fruit aromas. On the palate, the powerful tannins are noticeable at first, powerful and full, but beautifully integrated, then again these filling aromas. An impressive length and depth are noticeable on the finish.
