- Vinification: The grapes are harvested by hand in 12 kg crates, with strict attention paid to quality. After another quality control by hand in the wine cellar, the grapes are destemmed and then fermented at a controlled temperature in steel tanks of 4600 or 8850 liters. The maceration time is 20 to 25 days. For the subsequent lactic acid fermentation, part of the wine is transferred to cement tanks and the other part to wooden barrels. Ageing: 15 months in medium toasted oak barrels, 80% of which are French oak and 20% American oak. 70% of the barrels are new, 30% are used in the second year.
- Culinary recommendation: The Finca Biniagual Verán is an excellent accompaniment to beef, pork fillet or tapas with various Iberian meats and mature cheeses.
- Aroma & flavor: Intense nose, blueberries and black cherries with a hint of liquorice and herbs such as rosemary and thyme. Palate: the distinctive tannins are evidence of longevity and freshness. Roasted nuts and licorice on the finish. Voluminous and persistent.
