- Vinification: The Tempranillo grapes for the Riserva are over 25 years old. Due to their age, vegetative growth is significantly slower, resulting in smaller clusters and grapes, but higher quality. The calcareous soils at an altitude of over 750 meters also contribute to the outstanding quality. Limestone soils allow good water drainage and produce full-bodied wines that are perfect for ageing. Matured for 18 months in barriques and a further 18 months in the bottle.
- Culinary recommendation: Wonderful with beef - from steaks and stroganoff to tartare or slow-cooked roasts from the oven. A wonderful accompaniment to braised dishes of all kinds - whether lamb gigot, beef shoulder, roast pork or ossobuco.
- Aroma & taste: The Matarromera Reserva presents itself with an intense color. The nose is dominated by ripe black fruit aromas, accompanied by clear mineral notes that are characteristic of chalky soils. Light cocoa, spice and balsamic notes complete the aromatic experience. On the palate, hints of dark chocolate initially unfold, gradually giving way to fresh leather and a hint of pipe aroma. An exclusive wine that undergoes a remarkable development.
