- Vinification: Since 1982, Mionetto has relied on the Charmat method to ensure the protection of the special aromas and flavors of Prosecco. The grapes are gently pressed. The first fermentation takes place at a carefully controlled temperature. The second fermentation takes place in the fermentation tank to ensure the freshness and typical aroma of the grapes.
- Culinary recommendation: Perfect in combination with light fish and vegetable dishes as well as pasta or risotto.
- Aroma & Taste: A delicate straw yellow with a very distinctive bouquet that combines impressions of honey and wild apple. The palate is dry and pleasantly bitter. A well-calibrated acidity moderate, powerful and yet lean. The Mionett Cuvée Sergio releases a slender but dense pearl of needlepoint bubbles.
