- Vinification: The grapes, harvested by hand at the beginning of September, were destemmed, cold macerated overnight and then gently pressed. Fermentation at a low temperature (14 - 16°C) in stainless steel tanks, with the fermentation tank hermetically sealed towards the end of fermentation to preserve the natural carbon dioxide gas. Maturation of the wine - on the fine lees - in stainless steel tanks until shortly before bottling at the end of January. Malolactic fermentation was avoided in order to preserve the freshness of the wine.
- Culinary recommendation: Ideal as an aperitif, goes well with a wide range of starters, raw fish, vitello tonnato, pasta dishes, fish and shellfish, chicken and other white meats, fresh cheeses.
- Aroma & Taste: On the nose, aromas of lime and ripe bananas are captivating, the fresh palate begins with an elegant fruit sweetness, then becomes fuller in the middle and shows fine notes of gooseberries and pineapple, finishing wonderfully dry.
