- Vinification: A somewhat different Vermentino! Ten percent is fermented in wooden barrels, the rest in stainless steel. Then everything matures together on the fine lees for another six months. This retains the freshness typical of the variety, but the shoulders become broader and the aroma denser.
- Culinary recommendation: A white wine that goes well chilled with an aperitif, but becomes a lovely accompaniment to food a few degrees warmer. A wonderful accompaniment to grilled fish, shellfish such as lobster and scampi. A perfect match for Asian cuisine, but not too spicy and refined. Finest pasta and white truffle.
- Aroma & Taste: Enormously fresh and fruity, white peach, floral nuances, yellow apple, Williams pears, honey and a hint of Mediterranean herbs. Also fresh and fruity in the body, harmonious fruit acidity with a light almond note and mineral touch, gooseberry and kiwi, again fruity finish.
