- Vinification: Manual harvesting in small crates and triple selection guarantee the highest quality. Fermentation with indigenous yeasts from our own plots. Maturation in French barriques for 24 months. The Gran Reserva is then aged by Mataromera for a further 48 months. This wine is therefore only released onto the market six to seven years after its harvest.
- Culinary recommendation: Wonderful with beef - from steaks and stroganoff to tartare or slow-cooked roasts from the oven. A wonderful accompaniment to braised dishes of all kinds - whether lamb gigot, beef shoulder, roast pork or ossobuco. Harmonizes perfectly with various blue cheeses - from Gorgonzola to Roquefort and Blue Stilton.
- Aroma & flavour: The Gran Riserva delights on the nose with a variety of fruity aromas, perfectly harmonized with a hint of cinnamon and balsamic notes. On the palate, it develops complex aromas, with fresh red berries and fine dark chocolate standing out in particular.
