- Vinification: The grapes are harvested entirely by hand. After destemming, the grapes are carefully sorted, gently crushed and gravity-fed into temperature-controlled wooden fermenters depending on the parcel. Alcoholic fermentation lasts 7 to 10 days and extraction is always gentle, with the number of remontages (pumping over of the must) adjusted according to the cuvée and vintage. Maceration lasts around 3 weeks before the wine is racked in batches into barriques. The wine is then aged for between 16 and 18 months in French oak barriques, using 60% new wood. Ageing takes place in a wine cellar that is kept at a constant 15 °C.
- Culinary recommendation: Wonderful with beef - from steaks to stroganoff to tartare or slow-cooked roasts from the oven. Excellent with mature hard cheeses - from Parmigiano Reggiano and Sbrinz to Pecorino or older Alpine cheeses.
- Aroma & flavor: A royal bouquet on the nose with lots of blueberry notes, cassis, blackberries, precious woods and a delicate vanilla touch. Silky and elegant on the palate, with extremely fine tannins and a wonderful balance.
