- Vinification: After careful hand-picking, the grapes undergo cold maceration before fermentation begins. Alcoholic fermentation lasts 10 to 15 days, with 20 to 30% whole bunches being fermented before the mash is pressed and the young wine is transferred to barriques. Maturation in barrique barrels lasts 16 to 20 months.
- Culinary recommendation: A wonderful accompaniment to all kinds of braised dishes - whether lamb gigot, beef shoulder, roast pork or ossobuco.
- Aroma & flavor: A combination of fruit and roasted aromas on the nose, fine red berries and cherries, plus spicy notes. On the palate, the Clos de la Mousse offers a delicate, velvety attack. The tannins are present but fine and testify to the high ripeness of the grapes. The complex finish is a revelation, with a resurgence of wild fruit flavors, a suppleness and a saline note (due to the marl soils) that leave a mineral, lingering finish.
