- Vinification: After careful hand-picking, the grapes undergo cold maceration before fermentation begins. Alcoholic fermentation lasts 12 to 20 days, with 20 to 30% whole bunches being fermented before the mash is pressed and the young wine is transferred to barriques. Maturation in barrique barrels lasts 16 to 20 months.
- Culinary recommendation: A wonderful accompaniment to all kinds of braised dishes - whether lamb gigot, beef shoulder, roast pork or ossobuco.
- Aroma & flavor: Complex aromas of ripe red and black berries, with fine roasted aromas and hints of violets and smoky notes. On the palate, the wine has a subtle, floral aroma and a dense, elegant body. The tannins are silky fine and leave a long-lasting finish.
