- Vinification: The grapes are harvested by hand and carefully sorted. After destemming and gentle crushing, fermentation takes place in temperature-controlled stainless steel tanks or wooden vats for 7 to 10 days. Extraction is controlled by remontage and pigeage to achieve the perfect balance between fruit, tannin and structure. Maceration lasts up to 3 weeks, followed by maturation in French oak barriques, a significant proportion of which is new wood. The maturation period varies depending on the vintage and lasts 16 to 24 months.
- Culinary recommendation: Wonderful accompaniment to braised dishes of all kinds - whether lamb gigot, beef shoulder, roast pork or ossobuco.
- Aroma & flavor: Notes of raspberry jam, kirsch and ripe blackcurrants on the nose with hints of rose petals, ploughed black earth, spice cake and warm plums as well as a touch of star anise. Medium to full-bodied with a solid backbone of grainy tannins and seamless freshness, the palate displays a taut, muscular fruit profile with plenty of bright red fruit sparks and a long, earthy finish.
