  • Vinification: The Levanti parcel is exceptional. Internally we call it "Elly" because it was cultivated for many years by the Grand Dame of Graubünden, Elly Süsstrunk. Quick-drying, stony soil, deep-rooted, old vines (40 to 50 years old), weak-growing and vital - these are all attributes of a top single vineyard. The grapes are harvested extremely selectively by hand and gently destemmed in the cellar before being conveyed to large oak fermentation tanks. Once alcoholic fermentation is complete, the mash is transferred to the press by gravity, the young wine is transferred to stainless steel tanks and is of course pre-clarified sufficiently over several days, after which the wine is matured in French barriques for 12 months.
