- Vinification: Il Giubileo is vinified from 100% Merlot grapes from the Ascona, Locarno and Maggia Delta vineyards. The vines grow on sandy to sandy-loamy soils of granitic and gneissic origin. After temperature-controlled fermentation and maceration in stainless steel tanks for around three weeks, the wine is matured for around 18 months in French barriques, which gives the wine its structure, depth and elegant spiciness. Before release, it matures for several months in the bottle.
- Culinary recommendation: A versatile food companion - excellent with pasta with meat sauce, braised dishes, game or medium-aged cheese. Also an elegant choice with Mediterranean meat dishes.
- Aroma & flavor: Il Giubileo is an intense ruby red in the glass. The nose is dominated by aromas of small red fruits and ripe cherries, accompanied by fine spicy notes, balsamic accents and a hint of vanilla. On the palate, it is harmonious, elegant and fruity, with present, well-integrated tannins. The finish is soft, round and long-lasting.
