Description
- Country: Switzerland
- Region: Schaffhausen
- Vinification: Extremely old Pinot Noir vines thrive on the steep slopes of Schaffhausen's southern edge. The poor soil, rich in limestone, gives this wine its unmistakable character. After careful care and dedication, the Pinot Noir from the limestone matures for 12 months in French oak, and this process produces a red wine of impressive longevity and remarkable complexity.
- Culinary recommendation: Wonderful with beef - from steaks to stroganoff to tartare or slow-cooked roasts from the oven. Wonderful companion to poultry dishes - from white meat such as chicken breast or dung scratchings to more intense varieties such as turkey, quail and so on. Pairs excellently with soft cheeses - from Camenbert and Brie to Tomme and mild Taleggio.
- Aroma & flavor: The intense cherry notes marry elegantly with floral nuances, while the animating acidity structure gives the wine freshness and liveliness. The slightly more robust tannin rounds off the flavor profile and provides a pleasant substance. This harmonious complexity on the palate masterfully reflects the unique limestone terroir of Schaffhausen's southern edge.
