- Vinification: The grapes are destemmed and pressed, the must ferments for around 12-14 days in stainless steel vats at a controlled temperature of 25-28 °C. During this phase, the must is frequently re-infused, allowing the must to develop the noble tannins for which the bush-grown Carignano is so famous. After malolactic fermentation, the wine is transferred to small French oak barrels in first or second fill, where it matures for 10-12 months.
- Culinary recommendation: Excellent with hearty meat, wild boar, suckling pig and mature Sardinian sheep's cheese.
- Aroma & flavor: Dark berries dominate the first impression. These are complemented by spicy notes of vanilla, leather and juniper. Dense and full-bodied on the palate with a fascinating balance between tannin and fullness. A complex red with a long, smooth finish.
