- Vinification: Grapes from a variety of cru sites in the various municipalities of the entire Barolo area. Average age of the vines 10 - 45 years. Calcareous marl soils, with varying proportions of limestone and clay depending on the location. The hand-picked grapes are vinified and matured individually - vineyard sites, parcels. Malolactic fermentation in used barriques, after which the wines, still separated according to their origin, are matured in large wooden barrels, and to a lesser extent in barriques, for around 30 months, after which the final blending of the wine takes place. The wine is neither fined nor filtered before bottling.
- Culinary recommendation: With strong, dark meat dishes of beef, lamb, venison, also with mushroom dishes and truffles.
- Aroma & flavor: Dense bouquet of dried apricots and fragrant spices, broad and demanding, the palate presents itself rounded with lots of ripe tannin, a compact flow and with enormous potential in the finish.
