- Vinification: The hand-picked grapes for Sessantanni come from vineyards around the municipality of San Marzano. The wine is vinified with thermo-controlled fermentation at a temperature between 24-26 degrees Celsius. After fermentation, the wine is aged for several months in French barriques and in large Slovenian oak barrels. Old Vines = old vines. The vines are over 60 years old and produce the best and most concentrated grape material. The low rainfall also has a positive influence on quality.
- Culinary recommendation: Well-aged beef from the grill, pizza also works. Thin veal scaloppine on the grill with lemon and thyme. The simpler the better. You don't necessarily need a meal. It also drinks very delicately on its own.
