- Vinification: The Le Crocine Eva is made almost exclusively from Cabernet Franc, a grape variety that has special characteristics in Bolgheri. After the harvest, as soon as the grapes have reached optimum ripeness, they are carefully selected and destemmed. The must is then transferred to stainless steel tanks. Temperature-controlled fermentation and maceration take around three to four weeks and are strictly monitored in order to achieve a high level of complexity. After malolactic fermentation, the wine matures for around a year in French barriques, both new and used, before being bottled.
- Culinary recommendation: Pairs perfectly with grilled lamb, fillet of beef and mature cheese. It also unfolds its complexity with hearty dishes with Mediterranean herbs.

On the palate, it is enveloping and at the same time firm, with a pleasant balance and unexpected freshness.
