  • Vinification: To ensure a balanced ripeness of the grapes, the grapes and leaves are thinned out several times during the summer. The grapes are selected at harvest, picked by hand and placed in small crates to dry. The drying period lasts around three months, during which time the grapes lose 35% of their weight and reach an optimum sugar concentration. The partially dried and cold grapes are de-stemmed and fermented at a controlled temperature of 10°. After approx. 10 days, submerging of the cap and pumping over begins and after a further 30 days the marc is separated from the new wine, which continues its slow fermentation in small barrels made of French and American oak and Hungarian acacia. The wine matures for 20 months in barriques, followed by a further 6 months of bottle fermentation.
  • Culinary recommendation: An ideal accompaniment to game, dark meat and mature cheese.
  • Aroma & taste: Full ruby red color, ripe and dense. An explosion of fruity aromas, with hints of ripe dark berries and ethereal, pleasant roasted aromas on the nose. Mineral and spicy notes with hints of vanilla and butter. It is also a great wine on the palate. The high, very well-integrated alcohol content emphasizes the full tannins and makes it full and harmonious on the palate. Clear and long finish.
