- Vinification: Careful manual sorting of the grapes and gentle pressing to minimize tannins and preserve elegance. Fermentation takes place in stainless steel tanks at 19-20 °C, in 2022 with additional cooling by dry ice. Alcoholic fermentation takes place at 28-29 °C, with maceration periods of 11-13 days for Merlot and 15-16 days for Cabernet Sauvignon, as well as occasional pumping over. From November, the musts are transferred to 225-liter barriques made predominantly from French oak and 5% from American oak. We use 40% new wood, 40% wood from the second passage and 20% from the third and fourth passage. The Guidalberto is matured for a total of 14 months. This balances the tannins and emphasizes the aromas of the vintage. A final refinement in glass takes place before the market launch.
- Culinary recommendation: A fine accompaniment to lamb dishes from the pan or oven, grilled entrecôte, game dishes and mature cheeses.
- Aroma & taste: The Guidalberto is compact on the nose, with notes of dark berries, cassis and cherries, with some spice and fine roasted notes. The palate is full-bodied, with aromas of dark cherry, ripe berries, some tobacco and mocha. Finely polished tannins already hint at the drinking pleasure to come. Decanting is worthwhile.
