- Vinification: The grapes for the Ornellaia are harvested by hand in 15 kg crates. They are also selected before and after destemming on the double sorting table and then lightly crushed. Each grape variety and each vineyard parcel are vinified separately. The two-week alcoholic fermentation in steel and concrete tanks at temperatures of 26 to 30°C is followed by a maceration period of around 10 to 15 days. Malolactic fermentation takes place mainly in oak barriques (70% new and 30% second passage). The wine matures for around 20 months in barriques in the winery's temperature-controlled cellars. After the first 12 months, the wines are blended into a cuvée and returned to barriques for a further eight months. The release for the market took place after twelve months of bottle maturation.
- Culinary recommendation: Wonderful accompaniment to all kinds of braised dishes - whether lamb gigot, beef shoulder, roast pork or ossobuco.
- Aroma & flavor: The intense, rich and dense palate impresses with great concentration and powerful, fine-grained tannins. The finish reveals a great minerality and a very long aftertaste.
