In 1668, Dom Pierre Pérignon was appointed cellarmaster at the Abbey of Hautvillers. For forty-seven years, he dedicated his life to making what he hoped would be "the best wine in the world". The process is meticulous, a never-ending quest to refine aromas, reveal the subtleties of the terroir and offer unparalleled complexity. Each bottle of Dom Pérignon Vintage reflects the soul of the house: a velvety texture, a fine and delicate effervescence and a deep aromatic palette that evolves over time. From a fruity and floral bouquet to more complex notes of brioche, nuts and spices, the Champagne transforms with age, offering an experience that unfolds with every sip. The balance between power and freshness, richness and lightness, makes Dom Pérignon a champagne of character to be tasted and savoured. The 2015 growing season was one of contrasts. After a relatively mild winter, spring began with a cold spell, followed by intense and prolonged heat from mid-May to mid-August, with exceptionally sunny days and notable drought. These conditions caused water stress, resulting in different ripening rhythms in different regions. August 2015 was the hottest August on record since 1961. Fortunately, rain arrived in the second half of the month, ending the drought and allowing ripening to resume. Harvest began on 7 September with welcome sunshine. The excellent health of the grapes allowed the harvest to be spread over almost three weeks in optimal conditions. The tasting of the grapes revealed a magnificent generosity without excess.
Food pairing
Dom Pérignon Vintage 2015 reveals its unique character and is particularly good with refined seafood such as caviar, king crab and langoustine.
