- Vinification: The base wines, which consist of the best lots of Pinot Meunier and Chardonnay, are aged on the lees with plenty of sediment. They are clarified through slow sedimentation before secondary fermentation takes place in the bottle. Aging on the lees lasts approximately 72 months.
- Food pairing: Pairs perfectly with seafood—from mussels to grilled octopus or shellfish such as lobster or shrimp.
- Aroma & Taste: A multi-layered, complex bouquet of ripe pears, banana, and a hint of raspberries, complemented by subtle toasty and brioche notes. On the palate, it offers a fine, silky effervescence and a wonderful, invigorating freshness.
