- Vinification: A captivating idea, borrowed from the Solera method used for sherry in Andalusia. Starting with the 1998 vintage, Jerome began creating a “vin de réserve” from the best portion of his harvest after aging in barriques. Each year, he draws one-third of this reserve to create the Trio “S.” At the same time, he replenishes the amount drawn off with the new vintage. With this approach, Jerome is building the foundation of his wine library, as each new bottling of the “Trio S” increasingly reflects the sum of the vintages and the work done at the domaine. The “Trio” in the name stands for the trio of Pinot Noir, Chardonnay, and Pinot Meunier in the blend—the “S” stands for the Solera system. The current bottling consists of eleven vintages.
- Food pairing: A unique champagne for special occasions, whether as an aperitif or paired with sumptuous dishes such as warm oysters, lobster, and caviar.
- Aroma & Taste:\u00A0\u00A0The bouquet is elegant, characterized by ripe yellow fruits such as quince, peach, and mango; on the palate, there is an exciting interplay between minerality and juiciness on the one hand, and freshness and fruitiness on the other. A “vin de garde” that you can wonderfully incorporate into a champagne-themed menu.
