Description
- Type:
- Vinification: Fermentation takes place spontaneously using the vineyard's own yeasts in stainless steel and oak vats. Maceration on the skins lasts up to 30 days, after which the wine ages for a total of 20 months in wood—12 months in 500-liter barrels and, following blending, another eight months in large 35-hectoliter oak barrels to refine its structure.
- Food pairing: Bistecca, best enjoyed by the fireplace.
- Aroma & Taste: The bouquet entices with aromas of ripe cherries, plums, and delicate floral notes. These are interwoven with subtle toasted aromas and a delicate woody spice in the broad bouquet. On the palate, the Castello di Bolgheri delights with its power and density, supported by remarkable elegance and depth. The tannins are robust and pronounced, yet without seeming heavy. The finish once again reveals complex fruit aromas that linger for a long time.
