- Vinification:\u00A0The grapes are destemmed and crushed; the must ferments for about 12–14 days in stainless steel tanks at a controlled temperature of 25–28 °C. During this phase, the must is frequently topped up, allowing it to develop the refined tannins for which bush-trained Carignano is so famous. After malolactic fermentation, the wine is transferred to small French oak barrels (first or second use), where it ages for 10–12 months.
- Food pairing: Excellent with hearty meats, wild boar, suckling pig, and aged Sardinian sheep's milk cheese.
- Aroma & Taste: Dark berries dominate the initial impression. These are complemented by spicy notes of vanilla, leather, and juniper. Dense and full-bodied on the palate with a fascinating balance between tannins and richness. A complex red with a long, smooth finish.
