  • Vinification: Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature for about 15 days. After early malolactic fermentation, the wine is transferred to barriques in early December. It ages in new French oak barrels for 16 to 18 months, during which time it develops its complexity, style, and aging potential. The wine then ages for another 12 months in the bottle.
  • Food pairing: Hearty meat dishes featuring game, lamb, and beef, whether braised or, as is customary in Sardinia, grilled. We always recommend grilled fish. Not trout—no—it must come from the sea and have its own distinct flavor. Garlic, herbs, olive oil, and lemon pair perfectly with it. Delicious with aged cow's-milk cheese. Or an over-ripe sheep's-milk cheese from Sardinia—Casu Marzu.
  • Aroma & Taste: Complex bouquet. Cocoa powder, plums, blueberries, sweet spices, subtle wood notes, and dried fruit. Beautiful body, warm and very full-bodied with pronounced ripe tannins and a long finish. Perhaps one of Sardinia's finest wines.
