- Winemaking: Poggio al Sole's Chianti Classico comes from the rolling hills of the Chianti Classico region between Florence and Siena. The Sangiovese grapes grow in soils rich in limestone and galestro and are cultivated according to organic guidelines. The grapes are hand-harvested and fermented at controlled temperatures in stainless steel tanks. The wine is then aged for about 12 months in large oak barrels and, in part, in French barriques. The result is an authentic Chianti Classico with pronounced fruitiness, elegance, and regional character.
- Food pairing: Pairs excellently with pasta with ragù, pizza, grilled meats, Bistecca alla Fiorentina, or braised veal. It also pairs beautifully with antipasti, aged Pecorino, and Mediterranean vegetable dishes.
- Aroma & Taste: Bright ruby red. The nose reveals intense aromas of sour cherries, red wild berries, and plums, complemented by violets, Mediterranean herbs, and subtle notes of spices and tobacco. On the palate, the wine is juicy and well-balanced, with lively acidity, fine-grained tannins, and a harmonious structure. The long, elegant finish is accompanied by fruity and subtly spicy nuances.
