  • Vinification: From the Kalkofen vineyard in Maienfeld. In the wine cellar, the grapes undergo what is known as whole-bunch fermentation. This means the berries are not separated from their stems but ferment whole without being crushed. Only after about two-thirds of the fermentation is complete are they traditionally trodden by foot to avoid damaging the seeds as much as possible. Once the mash has finished fermenting after about four more days, it is gently pressed and then transferred to French barriques. The wine rests and matures in these barriques until spring. Just as in days gone by, when the weather outside slowly begins to warm up, the Pinot Noir Kalkofen begins its second fermentation and then spends another 12 months in the barriques.
  • Food pairing: Grisons specialties such as capuns, maluns, and dishes featuring white meat from veal and pork.
  • Aroma & Taste: The wine's aroma features many red berry notes—including strawberries and raspberries—as well as subtle vanilla and elegant toasted notes derived from barrel aging. On the palate, delicate fruity Pinot notes reappear, paired with a medley of spicy aromas. Rich texture, with very soft and elegantly integrated tannins. The juicy acidity complements the overall impression and provides freshness all the way through the long-lasting finish.
