  • Vinification: Labor-intensive hand-harvesting at the very latest possible time, 3–5 days of cold maceration, open-tank fermentation in wooden vats, manual punching down of the fermenting mash 1–2 times per day, gentle pressing, aging in French barriques (approx. 30% new oak) for 12 months.
  • Food pairing: Pairs very well with pork in a wide variety of dishes—from quick-fried cuts to roasts and sweet-and-sour dishes. A wonderful accompaniment to all kinds of braised dishes—whether leg of lamb, beef shoulder, roast pork, or ossobuco.
  • Aroma & Taste: The Salis Malanser Pinot Noir Spätlese Barrique presents itself in the glass with a brilliant ruby-red color that already hints at its youthful vitality. On the nose, it unfolds an enticing bouquet of ripe cherries, red berries, and delicate floral notes, accompanied by a hint of spices and subtle oak. On the palate, this Pinot is silky and elegant, with a good balance between fruit, acidity, and tannins. The aromas of juicy cherries and red berries carry through and are complemented by nuances of dark chocolate, a hint of smoke, and subtle spices. The finely integrated tannins lend the wine structure and support its long, lingering finish.
