Vinification: The Rüfiser vineyard is probably one of the best in Malans. It is situated on a scree cone, surrounded by Malans' other top vineyards. Protected from the wind and grown on unique soil, the vines retain their vitality and freshness even during prolonged droughts. Selective hand-harvesting. Gentle destemming into large wooden fermentation vats, followed by cold maceration to enhance fruit and color. Regular manual submersion of the mash during fermentation. Gentle pressing of the fermented mash. Aged for at least 12 months in French oak barrels (barriques).
Food pairing: Veal, beef, and lamb dishes, Grisons specialties, and aged cheeses.
Aroma & Taste:\u00A0\u00A0Rich color, impressive aromas, delicate notes of dark berries (blackberry and blueberry), complemented by aromas from the barrique aging: tobacco, subtle smoke, a hint of bacon, and incredibly deep fruit aromas. On the palate, the robust tannins are the first thing to stand out—powerful and rich, yet beautifully integrated—followed once again by those full-bodied aromas. The finish reveals impressive length and depth.
