- Vinification: Altamimbre is crafted with the utmost care and precision. The grapes are harvested by hand and undergo a rigorous inspection on the sorting table. Fermentation and maceration last approximately 20 days to extract maximum aromas and structure. The wine is then aged for 20 months in a combination of American and French barriques, with only a small portion aged in new oak. During bottling, the wine is treated with minimal filtration to preserve its natural richness and expressiveness.
- Food Pairing: Perfect with hearty meat dishes such as lamb, beef, and game, as well as aged cheeses made from cow's, sheep's, or goat's milk. Tapas and top-quality jamón also pair exceptionally well with the Altamimbre. For the best tasting experience, we recommend decanting it one hour before serving.
- Aroma & Taste: The deep, complex nose reveals aromas of ripe plums, dark chocolate, coffee, and a subtle tobacco sweetness. On the palate, the Altamimbre delights with a velvety attack, elegant, round tannins, and a delicately creamy texture.
