- Vinification: Following strict ripeness monitoring, the grapes are harvested in the first half of September. After destemming, a light cold-soak maceration is carried out to enhance the aromatic intensity of the must. The grapes are gently pressed, and the resulting must is fermented at a controlled temperature for about 20 days. The young wine then remains in contact with the fine lees for a while, which lends it body and complexity.
- Food pairing: Whether as an aperitif or a companion to fine dishes—the Carramimbre Verdejo is highly versatile. It pairs particularly well with smoked fish and meat, such as smoked salmon or mackerel. It also reveals its full aroma when paired with veal steak with chimichurri or Asian dishes. An ideal wine for enjoyable moments on the balcony, in the garden, or simply as a little treat in between.
- Aroma & Taste: This Verdejo delights with refreshing acidity and a juicy mouthfeel. Expressive aromas of freshly cut grass, fennel, and tropical fruits such as pineapple, guava, mango, and passion fruit. On the palate, the Verdejo is very intense and fruity, with good acidity, a refreshing character, and a long finish.
